A refined evening with Chef JL Johnston at Ro Hyde Park

Chef JL Johnston presents an intimate, multi-course omakase built entirely around the elegance of hamachi, a fish celebrated for its clean flavor, delicate richness and the way it responds to a chef who knows when to step back.

Each course explores nuance: shifts in texture, preparation and composition that reveal new dimensions of the same exceptional ingredient. Alongside it, a considered progression of gin — opening with bright, citrus-forward expressions and moving through increasingly botanical, complex profiles. The pairings are chosen to honor the fish, not compete with it.

As with all evenings guided by Chef Johnston, the menu is composed around what the season offers and what the chef decides at the height of his craft. No two seatings are the same.

There is no fixed menu. The evening follows availability and inspiration, which means no two seatings are alike.
