Chef JL Johnston presents an immersive, multi-course omakase celebrating two of the most elemental pleasures at the table: pristine shellfish and the depth of agave spirits. Each course is built around the purest expressions of the ocean: thoughtfully sourced, seasonally driven and handled with the restraint that lets great ingredients speak.
The agave journey moves with purpose — opening with bright, mineral-forward tequilas and evolving through richer, more complex aged expressions. Every pairing is calibrated to elevate the shellfish, not compete with it.
There is no fixed menu. The evening follows availability and inspiration, which means no two seatings are alike.
